Turkey Tetrazzini
Ingredients:
¼ cup butter
¼ cup flour1 tsp salt
¼ tsp garlic salt
¼ tsp pepper
2 cups half & half
2 cups chicken or turkey broth
¼ cup sherry
2/3 cup parmesan cheese 7 oz spaghetti noodles (cooked)
2+ cups cubed turkey
½ lb fresh mushrooms (or 1 can) – optional
Directions:
In large pot, melt butter – whisk in flour, salt, garlic salt, and pepper to make a roux. Cook roux over medium heat for a minute or two, whisking constantly. Add half & half and broth. Cook over high heat until thick and smooth, whisking constantly. Remove from heat. Add sherry, only 1/3 cup parmesan cheese, spaghetti noodles, turkey, and mushrooms. Pour into casserole dish. Sprinkle with remaining parmesan cheese. Bake at 375° for 30 minutes or until browned and bubbly.
